Fontina d’Aosta cheese is a D.O.P. (Designation of Origin) label. Fontina d’Aosta is a cheese made in Lombardy Piedmont, Italy.
It’s a semi-hard cheese recognisable from its purple logo stamped into the rind, it is made with pasteurised cow’s milk. The rind is a bit sticky and the yellowish/red paste has small holes.
The flavour is mild and nutty with an earthy and herbaceous taste with a hint of mushroom flavour. It can be eaten raw, grilled or even melted. This Mauri Fontina d'Aosta is aged for a minimum of 90 days.
