Blue cheese or Bleu de Brebis Cire of Frères Marchand is an artisanal cheese made of Roquefort, a D.O.P. cheese. Blue cheese is made from Ewe's milk by Marchand brothers in France. This Bleu de Brebis Ciré is soaked in a bath of cold wax when it is still white, then matured for 6 months without oxygen and light.
Blue cheese has a thick rind, the creamy paste has an ivory colour which gives this combo a unique texture. The taste has a sheep aroma as expected, a bit salty with mild acidity but less salty than the regular Roquefort thanks to the maturing process.
