Valençay is a luscious cheese prepared from raw goat’s milk with a rind that is light grey to light blue in color. Its texture is solid & homogeneous with floral nuances, slightly lactic flavor combined with an aroma of fresh or dried nuts.
Legend has it that the Prince of Talleyrand French diplomat was the inventor of Valençay cheese. He would have cut off the top of the pyramid so that the view of the goat cheese, in the shape of a beautiful pyramid, would not offend Emperor Bonaparte (first Emperor of the French, 1804-1814). The Prince of Talleyrand made the pyramid known to the good and elegant tables of Paris.
