This amazing Burrata is a fresh cheese obtained from cow's milk, with an outer layer of pasta stretched curd that contains, inside, pieces of stretched curd and cream.
The spinning of the dough to form the outer part is done manually, so as to be very thin. The filling, that is stracciatella, is made of handmade mozzarella strands, with the addition of cream.
Caseificio Burrata is unique for three details: in the closing part, it does not have the head, which is usually simply a piece of mozzarella cheese that adds weight but not flavor.
