The Azure Prawn of New Caledonia
New Caledonia, a small island intertwined with France since 1853, is cradled in the Pacific and surrounded by pristine waters. This island, home to the world's largest lagoon, recognized by UNESCO, found a treasure in the azure prawn, Litopenaeus Stylirostris. Discovered in Mexico, this prawn adapted perfectly to New Caledonia’s unique conditions, becoming a symbol of sustainable economic growth.

The Obsiblue Enterprise
Obsiblue is produced by SOPAC, a cooperative of twelve independent farmers. SOPAC manages everything from harvesting to processing, ensuring the prawns maintain their exceptional quality. The prawns are rapidly frozen to preserve their appearance, texture, and taste, with a recommended consumption period of 30 months.

The Farming Process
New Caledonia’s four hatcheries supply the larvae, with ponds situated directly within the lagoon. Fresh, plankton-rich seawater flows into the ponds daily, giving the Obsiblue its distinct blue hue. The prawns are fed locally produced, strictly monitored feed, free from antibiotics, growth enhancers, and GMOs. The farming process is certified by Bureau Veritas, ensuring full traceability from hatchery to consumer.

Culinary Delight
Litopenaeus Stylirostris, commercially known as Obsiblue®, is a rare and exquisite prawn with blueish-grey flesh and a firm, subtly sweet flavor. Annually, 1,300 tons are produced, with 60% exported to Japan. Obsiblue is sashimi-grade, best enjoyed raw, but it also retains its texture and flavor when cooked. Its delicate shell is easy to peel, and its heads are perfect for making rich bisque.
