Truffle Gouda is a farmhouse truffle cheese from the Netherlands, made from cow's milk. About 10% of the mixture is curd, which is pressed in circular molds for several hours. These molds are the main reason for their traditional and distinctive shape. Finally, the cheese is soaked in a salt solution, which gives the cheese and its rind a special taste.

The cheese is named after the Dutch town of Gouda, not because it is produced in or near that town, but because it has always been traded there.

In the Middle Ages, Dutch towns could obtain certain feudal rights that gave them primacy or a total monopoly on certain goods. Within the county of Holland, Gouda acquired market rights over cheese, the only right to have a market where the farmers of the county could sell their cheese.
