The extra old Mimolette is a cheese originally from France and specifically from the regions of Basse-Normandie, Lorraine and Nord-Pas-de-Calais. This cheese is a famous French specialty! It is a cow's cheese with a natural and dry rind. Since September 27, 1997, it enjoys a sign of quality: Label Rouge.
A careful balance is needed between the cheese, the rough wooden boards, and the bricks of the cellars so that the Mimolette is well matured. Both temperature and humidity are regulated to allow for this maturation. The curing process lasts from 2 to 24 months or even 30 months. A flavor of nuts will appear, at the same time as the Mimolette becomes brittle.
Mimolette can be used both as an appetizer and at the end of a meal.
