Cantal is an unpasteurized double pressed cheese from Haute Auvergne, France. Cantal has been a DOP (Protected Designation of Origin) approved since 1956.
It takes 400 liters of cow’s milk to produce a piece of 40kg. Cantal has a fruity flavour, a creamy texture, and taste with a hint of pepper and spices. Cantal Entre Deux has to mature between three and seven months.
